Baci di Dama & Ricotta Tart

This week I signed up for a Zoom Baking Class taught by Francesca Montillo, the owner of Lazy Italian Adventures.


There were about 10 of us. The class was so much fun. We all received the recipes early in the week so everyone had all the mise en place ready to go.

We all kept up with Francesca as she lead us through all the steps. I did have a technical issue of the food processor not operating. I am so glad I did not get rid of the smaller food processor I had so I was able to pull that into service.

The Baci di Dama were very similar to the Snowball cookies I make at Christmas but they have less flour and use cornstarch, and there are the ground Hazelnuts in the dough.

The No Bake Ricotta Tart was fun to make. The ricotta could have been store bought but

I wanted to make my own. I did that last night along with toasting and peeling the Hazelnuts. The pie filling was perfect. I use orange zest and I will either put chocolate on top or blackberries and blueberries. Have not decided yet. Maybe I will do 1/2 and 1/2.
