German Coffee Cake. My go-to recipe for an easy breakfast treat.

And I wanted to take a short break from Scones. The recipe is from The Food Network.

This time, I mixed the batter in a bowl and lined the baking pan with parchment paper. This made removing the cake easier and cleaning up faster.

German Coffee Cake

Ingredients-

1 cup brown sugar, packed

1 1/2 cups all-purpose flour

1/2 cup unsalted butter, softened

1/2 teaspoon baking soda

1/4 teaspoon fine sea salt

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

1 large egg

1/2 cup sour milk or buttermilk

Method-

Preheat the oven to 350°F and set out a 9x9 baking pan or 9" round cake pan. (That is what I used)

In a large bowl, combine the brown sugar and flour.

Cut the butter into the brown sugar/flour mixture with a pastry cutter.

Reserve 1 cup (approximately 150 g) and place in the freezer.

Stir the baking soda, salt, and spices into the flour mixture.

In a small bowl, whisk together the eggs with the sour milk (or buttermilk).

Pour the wet ingredients into the bowl and stir everything together with a spatula or wooden spoon until thoroughly blended.

Spread the batter out evenly into the baking tin and then sprinkle the reserved crumb mix atop evenly as well.

Bake for 30 minutes, until the top is golden and a toothpick tester in the center comes out clean.
