It seems that my go-to baking recipe site has become An Italian in the Kitchen.
The recipes are simple and the results are always delicious.
For Cake Week I opted for the Blueberry Lemon Ricotta Cake. I wanted to make a Coconut Cake but I will try that next week. I wanted something for breakfast and I had beautiful blueberries and ricotta in the fridge. I cut the recipe in half because I am just baking for two people.

The cake was moist and the blueberries just popped with flavor. I have a 6-inch bundt pan so there is just enough for the 2 of us for the weekend and a couple of breakfasts during the week.
