Irish Tea Bread

Why Irish Tea Bread and not Irish Soda Bread. Not sure other than I had never seen a recipe for Irish Tea Bread before.

Simp[e to make and no time to bake. Perfect for a Friday night bake where I would rather have crawled into bed.

The recipe is from All Things Bread.

The recipe made a nice size loaf for 2 people to devour on a weekend. I added chopped pecans just because. Next time I might add some chopped chocolate or maybe chocolate shots.

Ingredients-

2 cups +2 tablespoons all-purpose flour

½ teaspoon salt

1½ teaspoons baking powder

¼ cup cold butter

3¼ tablespoons granulated sugar

1 large egg

½ cup ½ tablespoon milk (I

Method-

Pre-heat oven to 350F˚. Line a cookie sheet with parchment paper.

In a large bowl whisk the flour, salt, and baking powder. Add the butter and combine to form coarse crumbs.

Mix in the sugar, add the egg, and milk, and mix with a fork until just combined.

Move to a lightly floured flat surface and gently knead to combine to form a dough ball.

Form into a round or oval shape. Place on a prepared cookie sheet. Prick with a fork or score the dough. Bake for approximately 30-35 minutes or until golden. Check for doneness with a toothpick.

We had this with our coffee this morning. We recommend a little cream cheese and Bonne Maman Blackberry Jam on top.
