Three Bakes This Week. Part Three. The Mixed Fruit Cobbler.

Why do I not make this more often? It was simple to make, and damn, it is quite good.
The recipe comes from the Crunchy, Creamy, Sweet blog. The recipe was for a Blueberry Cobbler. The name of the recipe is Best Blueberry Cobbler. No argument from me on that!

Of course, I made 1/2 the recipe and it is just perfect.
I had strawberries, blueberries, and cherries.

I have to take a moment for a product endorsement.
Recently, cherries have been priced reasonably, so I have been buying them more often than usual. I love them, but removing the pits is tiresome with a small knife. Then I ordered a Cherry Pitter. Actually a Cherry and Olive Pitter. And it is only $8. And it was delivered the day after I ordered it. I have used it 4 times in 2 days.

This is the recipe for small portion of cobbler.
Ingredients-
for the topping:
1/2 cup all-purpose flour
1/4 cup granulated sugar
1/4 + 1/8 tsp baking powder
1/8 tsp salt
3 tbsp butter, melted
for the fruit filling:
12 oz blueberries frozen or fresh ( I used a mixture of Blueberries, Strawberries, and Cherries)
1 1/2 tbsp cornstarch
2 tbsp granulated sugar
1 tbsp lemon juice
1/2 tsp vanilla extract
Method-
Preheat oven to 350℉.
Butter a small baking dish.
Melt butter and let it cool to room temperature. Too hot butter will cook the flour.
In a medium mixing bowl, whisk together flour, sugar, baking powder and salt.
Add melted butter and stir everything together with a fork, until it resembles very coars crumb. Set aside.
In another bowl, toss fruit with cornstarch.
Add sugar, lemon juice and vanilla and stir it in.
Pour the berries into the prepared dish.
Top with crumble topping.
Bake for 35 to 40 minutes OR until it bubbles on the edges and the topping is golden.
Remove from the oven and let it cool.
