The Tale of Two Doughs

It was the best of times, it was the worst of times, it was the age of wisdom, it was the age of foolishness, it was a Saturday morning and I did not bake on Friday night. No need to worry. There is Saturday morning baking.


Two Doughs. To different results.


Pizza Dough and Parmesan Focaccia Dough. The Pizza Dough is the Jim Lahey recipe.

The Focaccia recipe is my version of a recipe from Cooking with Momma C.

Rise and shine!

The Pizza dough was destined for Calzones.

The Focaccia dough was for frittata sandwiches.

I put the bowls covered with plastic wrap into the cold oven and put 2 pans of boiling water on the rack below the dough. Shut the door and you have a proofing oven



First Rise Check-In. Looking fine!


The finished results. 2 bacon and onion Calzones, with a batch of pizza dough for the freezer and 3 focaccia bread.
