Pane Integrale (whole wheat bread)

This morning I was planning ahead for the way I might feel at the end of today.

I was proactive in my baking.

Before leaving for work I mixed the dough for the Jim Lahey Whole Wheat Bread. This afternoon I received my 2nd shingles shot. I had Chicken Pox as a kid. It was a Halloween that I missed... My Dad had shingles twice. He was quite sick both times.

Getting the shot seemed like the right thing to do. The doctor told me to be prepared to feel ill after the second shot.

So I mixed my bread at around 6:30am.

The bread raised all day and tonight I popped it in the oven.

I do love this recipe. A beautiful crust. A perfect bake. I think I would have gotten a Paul Hollywood handshake for this one.
