Mom's Apple Cake



Some recipes don't need a fancy introduction—this is just a really good cake. The batter uses a simple 2-egg variation of the classic 4-egg cake that my Mom whipped up all the time. What transforms it into a standout Apple Cake? A beautiful layer of sliced apples fanned across the top, finished with a sweet, baked-in sprinkle of cinnamon and raw sugar.

Ingredients-
1/2 cup shortening, Spry or Fluffo
1 cup sugar
2 eggs
2 cups sifted cake flour or 1 cup all-purpose flour minus 2 tablespoons plus 2 tablespoons cornstarch
2 tsp baking powder
1/4 tsp salt
3/4 cup milk
1 tsp vanilla
2 apples, peeled and cut into thin slices (I used one Macintosh and one Cortland
cinnamon and raw sugar for sprinkling
Method-
Blend shortening, sugar, and eggs. Stir in combined dry ingredients alternately with milk and vanilla.
Pour batter into prepared pans. I used an 8" x 8" square pan, greased and lined with parchment paper.
Arrange the sliced apples on top of the cake and sprinkle with cinnamon and raw sugar.
Bake 350˚ for 25 to 30 minutes.
