Keeping It Simple. Cappuccino Cake and Chocolate Chip Cookies.

After a long week, I needed to bake but wanted something uncomplicated.

That Cappuccino Cake from An Italian In My Kitchen fit the bill.


And this week I overheard a comment about an almost empty cookie jar.

So, I made the easiest cookie that I know, My Mom's Chocolate Chip Cookies.

I cut both recipes in half.


This is the 1/2 recipe for the Cappuccino Cake. I used a 6-inch bundt pan.

I am writing this post on Saturday morning and I just got a review from the other room that the cake was delicious!!!

Cappuccino Cake


Ingredients-

1 cups all-purpose flour or cake/pastry flour (130 grams)*

3/4 teaspoons baking powder

1 pinch salt

1/3 cup chocolate shots (120 grams)

1 large egg (room temperature)

1/2 large egg yolk (room temperature)

1/2 cup granulated sugar (200 grams)

1/4 cup vegetable oil 

1/4 cup brewed coffee (room temperature) (59 grams)

*To make homemade cake/pastry flour, for every cup of all-purpose remove 2 tablespoons and substitute with corn starch, be sure to sift together to remove any lumps.


Method-

Pre-heat oven to 350F. 

Grease, flour or spray a 6-inch bundt pan.

In a bowl whisk together the flour, baking powder and salt, set aside.


In a small bowl, mix the chocolate chips with 1/2 teaspoon of flour, set aside.


In a medium bowl, beat the egg, yolk, and sugar until light and fluffy, for about 2-3 minutes. 


Add the oil and coffee and beat to combine, then add the whisked flour mixture and beat to combine, fold in a little more than half of the chips to the batter. 


Pour into the prepared pan. 


Sprinkle with the remaining chips and bake for approximately 30-35 minutes or until the toothpick comes out clean. 


Let cool completely, then dust with powdered icing sugar.



The Chocolate Chip Cookie Recipe for 1/2 a batch, 36 small cookies.


Ingredients-

1 cup + 2 tbsp sifted flour

1/2 tsp salt

4 tbsp unsalted butter, softened

1/4 cup  + 2 tbsp sugar

1/4 cup  + 2 tbsp brown sugar

1 egg

1/2 tsp vanilla

1/2 tsp hot water

1/2 tsp baking soda

6 oz. chocolate chips

1/2 cup oatmeal (I left this out this time)

1/2 cup flaked coconut

1/2 cup Rice Krispies


Method-

Blend butter and sugar and brown sugar.

Add eggs and vanilla.

Sift flour and salt.

Blend hot water and baking soda.

Add baking soda and flour to butter mixture.

Add all other ingredients except the Rice Krispies.

Stir in the Rice Krispies by hand, do not use the mixer (you don't want to over beat them). Roll them into a teaspoon size balls.

Place on baking sheet lined with parchment paper and bake for 10 to 12 minutes at 350 degrees.
