Friday Night Baking In 3 Acts. Act 3 -Zucchini Bread

I had a bit of zucchini in the fridge. I wanted to make something for breakfast so Zucchini Bread was baked. I had this recipe in a book that I started writing in 1980. I wrote down all the recipes that I loved. When I found out my Mom had dementia I took the book out and had her recite her Christmas Eve recipes. This little book has it all!


The bread was fantastic! Chris Loved It!!!


Ingredients-

2 eggs

1 1/2 cup sugar

1/2 cup vegetable oil

1 3/4 cups flour

1/4 tsp baking soda

1/4 tsp salt

1/2 tsp baking powder

1/2 tsp cinnamon

1/2 tsp vanilla

1 cup shredded zucchini

1/2 cups nuts (I used pecans)


Method-

Interestingly or not, I had no instructions on how to put this together.

But I have made enough of this type of bread to be able to wing it.

Preheat oven to 350˚

Using a standing mixer I beat the eggs and sugar until well blended.

I added the oil.

In a separate bowl I combined the flour, baking soda, salt, baking powder, cinnamon.

I added the flour mixture to the egg mixture, then the vanilla and zucchini. I stirred in the nuts.

The batter went into a pan that was sprayed with cooking spray.

The pan went into the 350˚ oven.

Now about how long... About an hour? I baked it until the cake tester came out clean. I think it was about an hour. Sorry I lost track of time.

But the result was an absolutely delicious bread!
