Cookies for Dinner
Updated: Nov 21
Our God Daughter made a request for my cookies for dinner when she is at my sister's house next week. Needless to say I baked Chocolate Chip Cookies tonight. Cookies for dinner? Well, my Dad use to have pie for breakfast.
The Chocolate Chip Cookie Recipe
2 1/4 cup sifted flour 1 tsp salt 1 cup unsalted butter, softened 3/4 cup sugar 3/4 cup brown sugar 2 eggs 1 tsp vanilla 1 tsp hot water 1 tsp baking soda 12 oz. chocolate chips 1 cup oatmeal 1 cup flaked coconut 1 cup Rice Krispies Blend butter and sugar and brown sugar.
Add eggs and vanilla.
Sift flour and salt.
Blend hot water and baking soda.
Add baking soda and flour to butter mixture.
Add all other ingredients except the Rice Krispies.
Stir in the Rice Krispies by hand, do not use the mixer (you don't want to over beat them). Roll them into a teaspoon size balls.
Place on baking sheet lined with parchment paper and bake for 10 to 12 minutes at 350 degrees.
