Snowballs, Roly Poly, Mexican Wedding Cookies. This is a popular recipe that goes by many different names. It is always the first cookie I bake when I start the Christmas Cookie Baking. It is my Mom's recipe and every year I always wish I had made more of them. A perfect little bite of a shortbread cookie that is baked and then rolled in confectionary sugar. It is simply a perfect cookie.
Snowballs
Ingredients-
1 cup softened butter
1/2 sifted confectionary sugar
2 1/4 cup shifted flour
1 tsp vanilla
3/4 chopped walnuts
1/4 tsp salt

Here is what you do -
Preheat ove to 400˚
Mix the butter and sugar until well blended.
Mix in the vanilla and flour and salt and walnuts.
Shape into small balls and place on baking sheet.
Bake 10 - 12 minutes.
Remove from oven and roll in confectionary sugar.
Yes this is additional sugar to the 1/2 cup in the ingredients list.
Best to do this when the cookies are hot out of the oven.
It covers them in a sugary soft coating.
